To prepare a new Uzbek Kazan (also known as a kazan) for use, there are some important steps you should follow:
Cleaning: Wash the kazan thoroughly with warm water and a mild soap. Be sure to remove any residue of production oil, dirt or dust.
Drying: Dry the Kazan thoroughly with a clean cloth. Make sure it is completely dry before using it.
Baking: Before using the kazan for the first time, burn it in to create a natural non-stick coating. This will also increase the durability of the kazan.
To burn in the kazan, follow these steps:
Fill the kazan halfway with water and bring the water to a boil.
Add a cup of household salt and stir until it is completely dissolved.
Let the salt water boil in the kazan for about 30-40 minutes. This will remove all impurities and pollutants while building up a natural non-stick coating.
Drain the water and let the kazan cool completely.
Then apply a thin layer of vegetable oil to the entire kazan, including the top and the handle. It is important here that you only apply a thin layer to avoid oil leaking out. Wipe off any excess oil with a cloth.
Place the kazan on a hot stovetop or in the oven and heat slowly to medium heat until the oil evaporates and the kazan is dry. It may take a few hours for the kazan to cure completely.
After baking, the kazan is ready for use. However, it is advisable to wash the kazan by hand with hot water and a mild detergent after each use and dry it thoroughly to keep it clean and maintain its non-stick coating.
